REGTESTS: jwt: create dynamically "cert.ecdsa.pem"

Stop declaring "cert.ecdsa.pem" in a crt-store, and add it dynamically
over the stats socket insted.

This way we fully verify a JWS signature with a certificate which never
existed at HAProxy startup.
